I'm a sucker for homemade mexican food. Seriously. I love homemade tacos, enchiladas, etc.. I found a recipe for Golden Chicken Enchiladas the other night and decided to give it a try. MMmmmmmm!!!! They were absolutely delicious! We'll definitely be using this recipe again in the near future. I found it on this website, www.eatathomecooks.com. Seriously....some of the best we've ever made!
